Chocolate Chip Banana Bread (gluten free)

Ingredients:

  • 225 g banana, mashed (about 3)
  • 75 g sugar
  • 3 tbsp coconut oil
  • 12 g organ egg replacer (made up with water = 2 eggs)
  • 60 g coconut flour
  • 3 tsp baking powder
  • ½ tsp bicarbonate of soda
  • pinch of salt
  • 50 g chocolate chips

Recipe:

  1. First, preheat the oven to gas mark 5 and line a tray with parchment or foil.
  2. In a large bowl, combine the banana, the sugar and the oil, then stir in the egg replacer.
  3. Sift in the flour, raising agents and salt, then fold in, followed by the chocolate chips.
  4. Spread the batter evenly into the prepared tray and bake for 30 minutes or until golden brown at the edges.
  5. Allow to cool completely before removing from the oven, then move to the fridge for at least an hour (overnight is better) to firm up before cutting.

Notes: So I only very recently started baking with coconut flour (love it, hate the price) and this was my second attempt with it. The first was my oreo brownies, which were delicious but were prone to falling apart. I did not pay attention to the advice to add more “eggs” when replacing wheat flour with coconut flour… whoops… However, I realised they were a lot more firm after spending a couple of days in the fridge!

Serves 10, 136 calories
